Step into the vibrant world of Levantine cuisine with my perfect lazy girl dinner recipe. If you’re in the mood for warak enab but you don’t feel like spending an ungodly amount of time rolling them, this will satisfy that craving. And save you a loooot of time. This is one of those dishes that is even better the next day so do something good for your future self and make it.
Ingredients:
1 cup rice
1 cup chopped up grape leaves
1 diced onion
4 cups chicken broth
2 lemons, squeezed
1 tbsp tomato paste
7 spice
salt
pepper
pomegranate syrup
pomegranate seeds; for topping
fried pita chips; for topping
chopped parsley; for topping
For the Yogurt:
1 cup yogurt
2 cloves of mashed garlic
1 tbsp tahini
3 tbsp lemon juice
Directions:
In a large pot, saute your diced onion in a bit of olive oil.
Add the tomato paste and cook it down.
Next, add chopped grape leaves and rice. Stir to combine.
Pour the chicken broth, seasonings, lemon juice, and pomegranate syrup.
Let simmer for 10-15 minutes; or just until the rice has cooked.
In a small bowl, make your yogurt mixture by combining the yogurt, garlic, tahini, salt, and lemon juice.
Begin assembling your fatteh. Place the rice mixture into a large baking dish, pour the yogurt mixture on top, add the fried pita chips, pomegranate seeds, and chopped parsley. Enjoy!
