I fused the vibrant flavors of the Mediterranean with the crunch of Latin American cuisine to develop my Fattoush Tostada recipe. Inspired by the iconic Middle Eastern salad, this innovative twist brings together crisp, toasted tortillas topped with a colorful array of fresh vegetables, aromatic herbs, creamy queso fresco, and a tangy sumac-infused dressing. Each bite is a symphony of textures and tastes, from the crunch of the toasted tortilla to the burst of freshness from the vegetables. Whether you're seeking a light and refreshing appetizer or a satisfying main dish bursting with flavor, these Fattoush Tostadas will not disappoint.
For the Salad
1 Diced Cucumber
1 Diced Tomato
3/4 cup Chopped Spring Mix
1/2 Cup Chopped Butter Lettuce
3 Diced Radishes
A Handful of Finely Chopped Cilantro
1/2 cup of crumbled Queso Fresco
4 Air-Fried Fried Tortillas
For the Dressing
1/2 cup Olive Oil
3 tbsp Pomegranate Syrup
Pinch of Salt
1 tsp Sumac
2 tbsp of Lime Juice
2 Garlic Cloves; mashed
1 tsp of honey (I like to add honey to balance the tartness of the pomegranate syrup. You can skip this if you like, it’s just my personal preference.)
Directions
Add all of your vegetables to a bowl and set aside.
In a small bowl, add all of your dressing ingredients and whisk to combine.
Pour your dressing onto your vegetables and combine.
Place your tortillas onto your serving plate and top with your salad.
Sprinkle your crumbled queso fresco onto your salad and enjoy!
